Egee's Favorite Breakfast

Egee has never been a big breakfast person.  I think it is because for the first eight years of her life, I would have to get her up at 6:00 am and we were out the door by 6:30 am to head to daycare and work.  So she got use to eating a bit of cereal at daycare.  On weekends I would make her scrambled eggs and this quickly became her favorite thing.  This is her favorite recipe for breakfast.

Ham, Onion, Cheese Eggs

Ingredients:
2 eggs per person
salt, pepper, garlic powder to taste
1/8 c of shredded cheddar cheese per two eggs
1/2 c of chopped onion
2 slices of ham diced
2 tbs of butter

Melt butter, add chopped onion, season with salt, pepper and garlic powder.

Chop ham while the onions are sauteing.

Add ham to onions and allow to cook. 


Crack eggs and add to the ham and onion mix.

Stir the mixture often so it won't stick.

As eggs begin to firm, add the cheese.

Continue to stir the mixture until eggs are firm and not glossy.

Ready to serve and eat!
