I was at a baseball meeting tonight and got home much later than I had expected. Hubby and the kids were at the dojo. I knew that I had about thirty minutes to figure out something quick, easy, and likable for everyone. Eating late is a given at our house, on most weekdays. A 9pm supper needs to be a fairly light meal. These would even be great for parties.
Recipe:
1 lb lean ground beef
1 can sloppy joe sauce
2 cans biscuits
1/2 cup graded cheese
Makes 20 sliders
Preheat oven to 400 degrees.
In a skillet, brown the ground beef.
Add the sloppy joe sauce to the browned ground beef and allow the sauce to warm.
Flatten the biscuits one at a time in the palm of your hand. Place the flattened biscuit in the bottom of a muffin pan.
Next, spoon sloppy joe mix onto the biscuits.
Top with shredded cheese.
Place in the oven at 400 degrees for 10 minutes.
Serve with a vegetable and supper is served!
These were a hit with the kids. Little Man can't wait to eat leftovers tomorrow.
